I had my fourth weigh in with Jenny Craig today. Unfortunately I have not lost any weight, I have stayed the same. But I am not disheartened , after speaking to my consultant, I am going to tweak a couple of things. One of which is I have not been eating my breakfast early enough, so I have promised myself to eat it with the girls, first thing in the morning. I must put more importance on this.
I have been walking lots more, and added an app onto my phone to count steps. On one walk that a friend and I went on, we did nearly 5,500 steps. With the school run on top, I am easily doing 12,000 steps in a day.
Now as its summer, I have been experimenting with salads. As I really think the key to keeping with the plan is to mix up the menu. This is especially true of the evening meals, as I need the side dishes whether they are salad or vegetables to work for me and the rest of the family.
Here is what I came up with this week:
Fennel and Broccoli Salad
- A bag of salad
- Steamed broccoli – put straight into cold water to retain the colour and cool.
- Finely sliced fennel
- Balsamic vinegar (I recommend buying the better quality vinegar, it really make a huge difference)
- Dash of Belvoir Ginger cordial
- Finely chopped chilli
- Salt & Pepper
It was really delicious, I put pine nuts in as well, for everyone else. Unfortunately my camera won’t let me download the photograph. I think my memory card is playing up. I’ll update the image as soon as I can.
