Whenever we go to Florida, we always go grab some pancakes for breakfast. Great for adult and children, you can have them many different ways. With syrup eggs and bacon, or fruit salad, which is my favourite. They are so filling and perfect, if you are doing the parks all day, you don’t really need anything else to eat until much later in the afternoon.
So I was excited to try this recipe, as I haven’t ever either eaten or made wholemeal pancakes before.
They are simply delicious! I sprinkled them with a little light brown sugar when I served them.
Florida grapefruit wholemeal breakfast pancakes
Ingredients to make 6 pancakes
100ml natural yoghurt
200mls skimmed milk
1 egg
1 tsp bicarb
100g SR Flour
75g Wholemeal SR flour
½ tsp salt
1tbsp sugar
50g melted butter
Grated zest of 1 Florida grapefruit and the segments
Method
- Zest the grapefruit and set aside. The peel and segment and leave in its juice
- Mix all the dry ingredients together inc the grapefruit zest. Mix all the wet ingredients together in a separate bowl. Then mix both together, but don’t over beat it. Leave the batter to sit for 10 mins
- Melt a little butter or spray a little oil in a frying pan and when it is hot, ladle in. Turn, when the pancakes form little holes on the top. (Half a ladle gives a nice American style pancake)
- Serve with the fresh grapefruit segments
