COMPETITION CLOSED – WINNER NOTIFIED (SUE C)
Going out for parties over the Christmas period is always one of the highlights of the season – but sometimes nothing can beat an evening at home eating, drinking and being merry.
DFS want to help you make this Christmas your best one ever and have produced this Christmas inspiration guide to help you create a magical time, whether you’re organising a big family gathering or a cosy night in for two. One thing they can’t help you with though is cooking the food. However, every good host should have at least one tried and tested party recipe they know how to prepare perfectly and is guaranteed to go down a treat.
My tried and tested, personal favourite festive recipe is ….my Baked Camembert. I don’t know anyone who hasn’t loved the oozing cheesy goodness of this one, and its a festive treat that is so worth the calories!
You will need :
-
1 whole Camembert, in its box
-
1/2 garlic clove, sliced (well it is Christmas)
-
3-4 sprigs fresh thyme or 1 of rosemary depending on what you prefer
-
1 tsp good olive oil
- Chilli flakes (optional)
Method :
- Preheat the oven to 200C/400F/Gas 6. and remove any plastic packaging from the cheese but place the cheese back in its box. Leave the lid off for now.
- Slice the garlic thinly and chop the herbs you have chosen to use.
- With a knife, pierce the top of the cheese in several places and insert the slices of garlic and herbs into the slits.
- Drizzle lightly with olive oil and optional pinch of chilli flakes.
- Take the cheese with olive oil and place on a baking sheet, I add some parchment paper underneath too, to save on the washing up, just in case any of the cheese escapes. Remember to leave the cheese in its box to bake. Loosely place the lid on.
- Bake in the oven for ten to fifteen minutes, or until the centre of the cheese is melted.
- Serve straight away with different breads, crackers or sliced vegetables like carrots and peppers. My Brother in Law swears by Doritos as the best thing to dip! What ever you choose, this recipe id always always a winner!
But what I want to know is – what’s your own trusted recipe that you go back to again and again? Is it a traditional family favourite? Or new concoction you discovered after throwing together the Boxing Day leftovers?
Let me know your top festive recipe below and my favourite will win a brilliant Fortnum & Mason hamper.

Okay, I know this might sound really weird but my Dad has always, always, ALWAYS made the following for Christmas dinner and I absolutely love it and have brought it all the way from America to my dinner table in Nottinghamshire. My dad’s stuffing is Cream of Chicken soup (cooked) mixed with salted (saltine) crackers (crushed to bits). It’s even delicious when cold! And for the turkey gravy for dinner, it’s made from the juices from the turkey, a bit of flour and tiny bit of water to make it liquid and sliced boiled eggs with the yolks crushed to thicken the gravy. Absolutely love it and my four-year-old always asks for more.

I make a roast turkey soup with the left over turkey. It’s just chicken stock, shredded turkey, sage and if there are any left over roasties pop then in too. Cook in a pan then take out and blend, then put back in the pan. When its nearly ready to serve pop in some frozen peas, just a few. When you serve the soup you can add a blob of creme fraiche or similar and a hunk of bread with real butter always goes well to make a hearty lunch on boxing day after a brisk walk.c

A great Christmas starter / canape we make year after year is smoked salmon on low-GI bread (this bread is from our local baker and is similar to granary but even more packed with seeds and goodness). The bread is cut into triangles, spread with a mixture of cream cheese and horseradish and with a piece of smoked salmon on top. Delicious! To avoid the supermarkets running out of smoked salmon for Christmas as they often do, we usually buy ours late november / early december and pop in freezer until needed.

Brazil Nut Roast is a firm favourite in our house as two members are vegetarian. I usually make it two weeks before Xmas and freeze it so it just needs cooking on the day. It is made in a loaf tin and I usually experiment a little every year to improve the flavours. It has brazil nuts, eggs, celery, cheese, carrots, onion, parsley, thyme, chilli, lemon, black pepper, breadcrumbs, but have also added seeds, and changed the veg. Briefly the nuts need roasting for 5 mins then put in the loaf tin on parchment paper the veg needs frying for about 5 mins and and then combined with the eggs breadcrumbs and all the other ingredients. Grate some spare cheese and nuts on the top Loaf and cook for 50 mins.

We have Ris à l’amande, in the Danish tradition. It is a very creamy rice pudding with chopped almonds (the à l’amande) and served with cherry sauce. One whole almond is added. Whoever gets the whole almond must keep it secretly in their mouth so that it remains whole until all the pudding is gone. Then, they can reveal that they have it and they receive a small present, this is known as ‘mandelgaven’ (lit. The Almond Gift) it is a little like the old silver sixpence in the English Christmas Pudding, but a little less heavy to eat and a little more fun to play :0)
