You can’t go to Italy and not talk about the food. Following my trip with Canvas this Summer to the Camping Village Portofelice, Caorle near Venice I sampled many, many culinary delights, either at the restaurant on site or at the nearby village. I think two dishes that stood out to me was the Chilli and Garlic Pasta, and the Pizza Fritta which is a traditional pizza that is fried in a pan. Both delicious, packed full of flavour and simple to recreate at home. Alongside those I can’t not talk about the desserts which were also crazy good, and the gelato was to die for. There seemed to be quite a lot of traditional desserts, and these was often flavours of the gelato, a firm favourite with me and the girls to finish off a meal.
One thing you couldn’t fail to notice was that Nutella was everywhere. I had no idea that Nutella originated in Italy! I decided to make a dessert using Nutella, and I shared that with you yesterday, today I thought I would recreate my favourite pasta dish at home, which is something I love to do. Its all part of bringing that holiday home don’t you think?
I used my favourite olive oil, Pomora – from my own adopted olive tree, a year on I still think it is the coolest gift. Good quality spaghetti and my new favourite Circulon frying pan.
First up Chilli and Garlic Pasta -this serves 4 large size portions
- 500g spaghetti
- 3 fresh red chillies
- 3 garlic cloves
- 8 tbsp extra virgin olive oil
- 2 tbsp chopped parsley
- salt/pepper
- Parmesan

Bring a pot of salted water to the boil and add the spaghetti. Cook until the spaghetti is al dente.

Finely chop the chillies and the garlic.

Heat the olive oil in a frying pan. Cook the garlic and chillies gently for a few minutes in the oil, over a medium heat.

Drain the spaghetti and add to the frying pan, make sure you mix well so that all of the spaghetti is coated.

Sprinkle the spaghetti with the parsley, Parmesan (or if you are vegetarian a veggie Italian hard cheese) and season with salt, pepper and serve.
Italy on a plate right there!

I love Italy, pasta and camping/caravan parks on the continent. We’ve stayed at campsites at Lake Garda, Italy, and the south of France so I’ll pop and have a look at your Canvas hol post. This recipe is so simple but looks delicious. What do you think of your Circulon pan? Can you use them on an induction hob?

Yes the pan is from the Ciculon Ultimum range, and thats suitable for a induction hob. Great value and quality!

The weight was a concern for me, as I recently bought one that was too heavy. This one is perfect, it feels substantial but not too heavy. Yes it can be used in the oven, yesterday I shared a recipe for Pizza Cookie Pie, where I used it in the oven.

Its brilliant, as its not only non stick because of the surface but it also has these high low grooves to make sure nothing sticks.
