I’m all about convenience these days, but no matter what, I always want my family to have a wholesome and delicious dinner. Quality time at the dinner table has been an important part of our family life since my girls were born, and no matter how much we all have going on, we always try to eat supper together. When it comes to whipping up a yummy, quick dinner that both my kids and hubby will love, HelloFresh has become my secret weapon! The meal kit delivery service sent me a Family Box with delicious veggie recipes to try that had lovely, fresh produce and detailed recipe cards to make dinnertime a whole lot easier- and tastier! I selected all veggie dishes, but HelloFresh has a selection of 19 worldly recipes each week for you to choose from. They send you perfectly portioned ingredients with step by step recipe cards that take you through every step of cooking the meal.
The best part is that you don’t have to be that skilled in the kitchen to use HelloFresh. I’d consider myself quite the chef, but even I found myself learning some new culinary tricks and tips from the recipes.
After receiving my HelloFresh box, I started by making the Creamy Tomato Gnocchi. We’re big pasta fans in my house, so I was excited to make this one. I was really impressed with how fresh all of the ingredients were, and the hazelnut pesto gave the whole dish a rich earthiness. I’d never tried pan-fried Gnocchi before, but safe to say I’ll be trying this cooking method again. It gave them soft little dumplings a crispy finish that was perfect with light tomato sauce. The whole dish took under 30 minutes to make, and the whole family cleaned their plates!

Next up was the Coconut Dal with Chapatis and Charred Courgettes. This one took a little longer to prepare, about 45 minutes (HelloFresh also has delicious, ten minute recipes if you’re short on time), but was so tasty and a great alternative to a takeaway. It was packed full of lentils, chickpeas and spinach, and was a really filling meal, without making you feel too full. This recipe was a little bit more complex, but definitely still easy to follow- and so worth it! After simmering the lentils and chickpeas in coconut milk, I then toasted the dried coconut- my whole kitchen smelled so good!
The charred courgettes and sprinkling of toasted coconut really took this dish up a notch, and the depths of flavours were amazing. The pan-fried tortillas (cheat chapatis!) were perfect for scooping up the delicious dal, too.
HelloFresh was so easy to use, and both my family and I really enjoyed the diversity of the meals. They have great options for vegetarians like me, and even my meat-eating hubby enjoyed the dishes.
