The Ana Mum Diary was lucky enough to be picked as one of 15 blogs to be sent some products to create something that I (Amanda or for my twitter pals @gidders1) would love to receive on Valentines day.
I took some time deliberating on what I would cook for the Baking Mad Valentines competition. Once the box of goodies arrived, there were lots of things that I had never used before, so was really looking forward to trying them out.
Ok, so here’s the box of goodies I was kindly sent:
Now my favourite cake is a Victoria Sandwich, even the thought makes my mouth water. So I decided that I would make this, but include some of the products that Baking Mad sent me, to hopefully enhance it even further! All items I have used, that Baking Mad have sent me are highlighted in blue.
For the cake I used:
- 200g of caster sugar
- 200g softened butter
- 4 eggs beaten
- 200g of self raising flour
- 1tsp baking powder
- 1 Silver Spoon Create Vanilla Paste Sachet *
- 2 tbsp milk
Method:
It’s an all in one method, so really easy You simply mix all the ingredients above until you have a smooth soft batter.
Line and grease two 20cm sandwich tins.
Divide the mixture between these tins, and smooth the surface.
Place in a preheated oven of 190 or Gas Mark 5 for approx 25 minutes.
Once these were cooled, I spread one half with Raspberry Jam.
I then added the second item from the box. Silver Spoon, Easy Melt White Chocolate*. I had already prepared this by simply putting it in half boiling, half cold water for 7 minutes. It was now ready to pour on as filling. No mess!
Once the second half of the sandwich was on, I then melted the chocolate topping, Silver Spoon Chocolate Flavour Cake Covering*.
This was incredibly easy to do, you simply put in a microwaveable bowl for 1 minute and stir. The cake was then covered with the chocolate. You may be able to tell by this point I love chocolate!
I thought it was worth while including this photograph, apologies it’s at a funny angle. I was particularly impressed with the glossiness of the chocolate covering, and how easily it melted!
So the only thing left was to decorate the top. For this I used two more of the products sent to me by Baking Mad
Silver Spoon, Letters and Numbers* and Duo White Chocolate Hearts*

I hope that you can see how moist the cake was…it disappeared very quickly!
I would definitely recommend all of the products that I used, they were not only easy to use and mess free but absolutely delicious!
So that was what I would like for Valentines day…oh and a lovely cup of tea too!
