I’m always on the look out for easy weekend lunches. The need to be quick and simple, but healthy filling and nutritious.
Here is my recipe for a tuna melt, which I served with a huge salad and lots of sliced orange and red peppers. It is delicious and super quick, a huge hit with all of the family.
You will need :
- A can of tuna
- 3/4 spring onion, or one small shallot. Very finely chopped.
- Light Mayonnaise
- 1 Small Ciabatta Stick
- A handful of grated cheese
- Lots of freshly ground black pepper and a little salt.
- You can also add a dash of Tabasco, or paprika, if you would like it slightly spicy or smoky.
Method
Split the ciabatta stick, and toast both sides.
Open the can of tuna, drain and place in a bowl with the mayonnaise. Use your judgement, how much it needs, I use 4/5 tablespoons in mine usually. Add to this mixture the very finely chopped onion and seasoning. Combine this and then put the mixture on the toasted ciabatta.
Finally add the cheese, and place under the grill. It should be bubbling, when it is ready to serve.
