So following on from my earlier post today about my Vitamix Total Nutrition Center, I thought I would share with you a recipe for a soup that I’ve been tinkering with for lunches this week, simple and nutritious 6 vegetable soup.
All you need is the fresh ingredients below, your Vitamix, and no other pots and pans to make this. It’s a one pot wonder!
So for this recipe I used, and this was the order I also placed them in the blender.
- 2 cups of cold water -using the measuring container that comes with the Vitamix
- 2 carrots
- 1 stick of celery
- 1 clove of garlic
- 1 spring onion
- handful of green beans
- 3 small tomatoes
- 1/4 of a yellow pepper
- rosemary, and chives
- 1/2 a vegetarian stock cube
- Seasoning, including a dash of Tabasco
As I added those ingredients in, I simply snapped the carrots and celery into smaller pieces, the rest went in whole.
To actually make the soup, is so simple. You pulse on a lower 1/2 speed, until all of the large pieces have broken down and the soup has started to come together. You then increase the speed to the maximum and leave for around 6 minutes. I need to invest in a little kitchen timer for this, as my memory is so poor, and I’m easily distracted.
Once those 6 minutes is up, take the lid off and you are left with a steaming hot delicious soup. This recipe is enough for two lunches, I saved half in one my new Ikea pots from my #LiveLagom project.
It’s definitely not a soup that my children would enjoy, as they prefer a creamier or tomato based soup, this tastes fresh healthy and virtuous! I’ve not forgotten them though, as the next recipe is one for them (and me) and they LOVE it!
